Ingredients

  • 4 whole mackerel, cleaned and gutted
  • 2 teaspoons sea salt
  • 1 tablespoon vegetable oil
  • 1 lemon, cut into wedges
  • Steamed rice, to serve
  • Kimchi, to serve
  • 2 spring onions, sliced, to serve
  • 1 tablespoon soy sauce, to serve

Instructions

  1. Pat the mackerel very dry inside and out, then score the skin diagonally on both sides.
  2. Rub the fish generously with sea salt and leave for 10 minutes.
  3. Heat a grill pan or barbecue over medium-high heat and brush lightly with oil.
  4. Grill the mackerel for 6 to 7 minutes per side until the skin is crisp and the flesh flakes easily.
  5. Rest the fish for 2 minutes before serving.
  6. Serve with lemon wedges, rice, kimchi and spring onions.

Pro tips

  • Drying the fish well is the key to crisp skin.
  • Do not move the fish too early, or the skin will stick and tear.
  • A well-ventilated kitchen helps, as grilling mackerel is aromatic.
