Ingredients
- 500 g full-fat Greek yoghurt
- 1 cucumber, grated
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp fresh dill, chopped
- 1 tbsp fresh mint, chopped
- 1/4 tsp black pepper
- Salt to taste
Instructions
- Grate the cucumber, salt it lightly and squeeze out as much water as possible in a clean cloth.
- Stir the cucumber into the yoghurt with garlic, olive oil, lemon juice and dill.
- Season with salt and pepper, taste and adjust the lemon, then chill for at least 30 minutes so the flavours meld.
- Stir once more just before serving and garnish with extra dill.
- Drizzle with a little more olive oil and serve with pitta, vegetables or grilled meats.
- Plate Tzatziki nicely, garnish as you like, and serve fresh.
Pro tips
- Squeezing the cucumber dry is the key to thick, not watery, tzatziki.
- Full-fat yoghurt gives the best creamy texture.
- It tastes even better the next day.
