Pro tips

  • Dry skin is the key to crackling, so refrigerate the belly uncovered overnight.
  • Score the skin without cutting into the meat below.
  • If some patches stay soft, finish them under a hot grill for a few minutes.
  • Resting before slicing keeps the meat juicy.

Frequently asked questions

Why is my crackling not crisp?

The skin was probably damp; dry it thoroughly and finish at high heat.

Can I use an air fryer?

Yes, cook at 160°C for 40 minutes, then 200°C for 15 minutes, checking often.

How long does crispy pork belly keep?

It is best fresh, but leftovers re-crisp in a hot oven for 10 minutes.

What sauce goes with it?

A tangy fish sauce, lime and chilli dip cuts the richness perfectly.
