Ingredients

  • 800 g potatoes, peeled and diced
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 serrano chillies, sliced
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Juice of 1 lime
  • Fresh coriander, chopped, to serve
  • Warm tortillas, to serve

Instructions

  1. Parboil the potatoes in salted water for 5 minutes, then drain and let them steam dry.
  2. Heat the oil in a large frying pan over medium-high heat and fry the potatoes until golden and crisp, about 12 minutes.
  3. Add the onion and serrano chillies and cook for 5 minutes more until softened.
  4. Stir in the garlic, cumin and paprika and cook for 1 minute until fragrant.
  5. Season with salt and pepper, squeeze over the lime juice, and scatter with coriander.
  6. Serve hot with warm tortillas.

Pro tips

  • Let the potatoes steam dry after parboiling so they crisp up instead of steaming.
  • Do not crowd the pan, or the potatoes will soften rather than brown.
  • Remove the chilli seeds for a milder dish, or keep them for extra heat.

Frequently asked questions

What chillies work best?

Serranos give a bright, sharp heat, but jalapeños or poblanos work well for a milder version.

Can I bake the potatoes instead?

Yes, toss with oil and roast at 200°C for 25 minutes, adding the onion and chillies halfway through.

What can I serve it with?

It is excellent with fried eggs, tacos, grilled chicken or as part of a Mexican breakfast.
