Ingredients

  • 2 cups whole wheat flour (atta)
  • 1 cup fresh fenugreek leaves (methi), washed and finely chopped
  • 1/2 cup plain yoghurt
  • 1 tablespoon oil, plus more for cooking
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1 teaspoon grated ginger
  • 1 green chili, finely chopped
  • 1 teaspoon sugar
  • Salt to taste
  • Warm water, as needed

Instructions

  1. Mix the flour, chopped fenugreek, turmeric, chili powder, coriander powder, cumin powder, ginger, green chili, sugar, and salt in a large bowl.
  2. Add the yoghurt and oil, then knead into a soft, smooth dough, adding warm water a little at a time as needed.
  3. Cover the dough and rest it for 15 minutes so the flour hydrates and the theplas roll out easily.
  4. Divide the dough into 10 equal balls, then roll each one into a thin round about 15 cm across, dusting lightly with flour.
  5. Heat a tawa or flat pan over medium heat and cook each thepla for about 1 minute until small bubbles appear.
  6. Flip, brush lightly with oil, and cook the other side until golden spots appear, pressing gently with a spatula.
  7. Repeat for all theplas, stacking them under a clean cloth to keep them soft, and serve warm with yoghurt and pickles.

Pro tips

  • Chop the fenugreek leaves finely so they distribute evenly and do not tear the dough while rolling.
  • A short rest for the dough makes a real difference to how soft the finished theplas turn out.
  • Keep cooked theplas stacked under a cloth so the steam keeps them supple instead of drying out.
  • These travel beautifully, so pack them with pickles and yoghurt for a lunchbox or road trip.

Frequently asked questions

Can I use dried fenugreek instead of fresh?

Yes, use 2 tablespoons of dried kasuri methi soaked in warm water for 10 minutes, though fresh leaves give a brighter flavour and softer texture.

Why do my theplas turn out hard?

Cook on medium heat, press gently with a spatula, and do not overcook them; brushing lightly with ghee or oil also keeps them soft.

Can I make the dough ahead of time?

Yes, the dough keeps well in the fridge for up to 2 days, and cooked theplas stay soft for a day at room temperature in an airtight container.

What do I serve with Methi Thepla?

Plain yoghurt, mango pickle, garlic chutney, and a simple potato sabzi are all classic partners for thepla.
