Ingredients
- 4 large potatoes, boiled and mashed
- 1 small onion, finely chopped
- 2 green chillies, finely chopped
- 1 tsp grated ginger
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 2 tbsp chopped coriander leaves
- 2 tbsp cornflour
- Oil, for shallow frying
- Salt, to taste
- Chutneys and yoghurt, to serve
Instructions
- Mix the mashed potato with onion, chillies, ginger, spices, coriander and cornflour until it holds together.
- Season well, then shape into 8 flat patties about 1 cm thick.
- Chill the patties for 15 minutes so they firm up and fry neatly.
- Heat a thin layer of oil in a pan over medium heat.
- Fry the patties 3 to 4 minutes per side until deep golden and crisp.
- Serve hot with tamarind chutney, mint chutney and a spoonful of yoghurt.
Pro tips
- Use dry, well-drained mash; wet potato makes patties that fall apart.
- Chilling before frying is the secret to patties that keep their shape.
- Press the edges smooth so they do not crack in the pan.
- For chaat, top with chickpeas, yoghurt and chutneys.
