- 150 g feta cheese, crumbled
- 2 eggs, beaten
- 1 onion, finely chopped
- 2 spring onions, chopped
- 3 tablespoons chopped dill
- 2 tablespoons chopped mint
- 80 g plain flour
- 1 teaspoon baking powder
- Salt and pepper, to taste
- Vegetable oil, for frying
- Lemon wedges, to serve
- Tzatziki, to serve
Instructions
- Grate the zucchini, salt it lightly and leave for 10 minutes, then squeeze out as much water as possible.
- Mix the zucchini with the feta, eggs, onion, spring onions, dill and mint.
- Stir in the flour and baking powder, and season with pepper.
- Heat oil in a pan and drop in spoonfuls of the mixture, flattening them slightly.
- Fry for 3 minutes per side until deep golden and crisp.
- Drain on paper towels and keep warm while you fry the rest.
- Serve hot with lemon wedges and tzatziki.
Pro tips
- Squeezing the zucchini dry is essential, or the fritters will fall apart.
- Do not overcrowd the pan; the oil temperature will drop and the fritters will go soggy.
- Fresh herbs make all the difference, so do not skip them.
- They are best eaten straight from the pan.
