- 700 g chicken breast or thigh, cubed
- 3 tbsp olive oil
- Juice of 1 lemon
- 2 garlic cloves, minced
- 1 tbsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- Pitta bread, to serve
- Salad: tomato, cucumber, red onion
- Tzatziki, to serve
Instructions
- Whisk the olive oil, lemon juice, garlic, oregano, salt and pepper, and marinate the chicken for at least 30 minutes.
- Thread the chicken onto skewers, leaving a little space between pieces.
- Grill over high heat or under a hot grill for 4-5 minutes per side until charred and cooked through.
- Rest the skewers for 5 minutes so the juices settle.
- Serve in warm pitta with salad and a generous spoonful of tzatziki.
- Plate Chicken Souvlaki nicely, garnish as you like, and serve fresh.
Pro tips
- Do not crowd the skewers or the chicken will steam instead of char.
- Thigh meat stays juicier than breast if you grill a little long.
- Warm the pitta on the grill for the last minute.
