Biryani Recipe

Biryani is the crown jewel of Desi cooking: fragrant basmati rice layered with marinated meat, saffron, and fried onions, then slow-steamed until every grain is perfumed. The ritual of sealing the pot and letting it rest is half the magic, and lifting the lid at the table is a moment in itself. This version is rich, aromatic, and made for sharing.

Ingredients
- 750 g bone-in lamb or mutton pieces
- 500 g basmati rice, soaked for 30 minutes
- 300 g plain yoghurt
- 2 large onions, thinly sliced and fried until golden
- 2 tomatoes, chopped
- 3 tablespoons biryani masala
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1 pinch saffron soaked in 4 tablespoons warm milk
- 1/2 cup each fresh coriander and mint leaves, chopped
- 4 tablespoons ghee or oil
- 2 green chilies, slit
- Salt to taste
Instructions
- Marinate the meat with yoghurt, ginger-garlic paste, biryani masala, chili powder, turmeric, and salt for at least 1 hour, or overnight for the deepest flavour.
- Boil the soaked rice in salted water until it is about 70 percent cooked, then drain immediately so it finishes cooking in the pot.
- Heat the ghee in a heavy pot and cook the marinated meat with the tomatoes and green chilies until the meat is half-cooked and the sauce thickens.
- Layer half the rice over the meat, scatter half the fried onions, coriander, and mint, then repeat with the remaining rice and garnishes.
- Drizzle over the saffron milk and a little ghee, then seal the pot tightly with a lid or foil.
- Cook on low heat for 40 to 45 minutes so the steam finishes the rice and marries all the flavours.
- Rest the pot for 10 minutes before gently mixing the layers at the table and serving with raita.
Pro tips
- Par-cooking the rice is the single most important step; fully cooked rice turns mushy during steaming.
- A tight seal on the pot traps the steam that finishes the dish, so weigh the lid down if needed.
- Resting the biryani before serving lets the layers settle and the flavours blend.
- Make the fried onions ahead and keep them crisp in an airtight container to save time.
Frequently asked questions
What rice is best for Biryani?
Basmati rice is essential: it stays long and separate after cooking, and its natural fragrance is part of the dish.
Can I make this biryani with chicken?
Yes, this recipe works beautifully with bone-in chicken thighs; reduce the marinating time to 30 minutes and cook until the chicken is tender.
Can I use regular long-grain rice instead?
Yes, just soak it for 30 minutes and cook it about two-thirds of the way before layering, as you would with basmati.
What do I serve with Biryani?
Raita, a simple kachumber salad, and pickles are the classic accompaniments that balance the richness of the rice.
