Ingredients
- 500 g minced chicken
- 1 head butter lettuce, leaves separated
- 1 can water chestnuts, diced
- 1 onion, finely diced
- 2 garlic cloves, minced
- 1 tablespoon grated ginger
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon vegetable oil
- 2 spring onions, sliced
- 1 teaspoon chilli flakes, optional
Instructions
- Heat the vegetable oil in a wok over high heat and fry the chicken, breaking it up, for 5 minutes.
- Add the onion, garlic and ginger and cook for 2 minutes more.
- Stir in the soy sauce, hoisin, rice vinegar and chilli flakes.
- Add the water chestnuts and cook for 2 minutes until everything is glazed.
- Take off the heat, stir in the sesame oil and spring onions.
- Spoon into lettuce cups and serve immediately.
Pro tips
- Use butter lettuce or iceberg; the leaves need to cup and crunch.
- Keep the heat high so the chicken browns instead of steaming.
- Chop the water chestnuts small for crunch in every bite.
- Serve the filling warm and the lettuce cold for contrast.
